A Journey of Taste: From Italy to Japan, via Amsterdam
I’ve always believed that great food is more than just taste—it’s an experience. Growing up in Italy, I was surrounded by a culture that valued quality and tradition. From the perfect espresso to the finest olive oil, everything was about craftsmanship and purity. I thought I knew great flavours—until I discovered matcha.
It wasn’t in Japan. It wasn’t even in Italy. It was in Amsterdam, a city full of new ideas, where I had my first sip. While working at Soho House, I was introduced to high-quality matcha, but it was during my time at Matcha Mafia’s first store serving matcha in Amsterdam in 2019 that I truly fell in love with it. There, I met Marije and Ilona, two inspiring women who shared my passion for quality and ritual. They made me see that matcha was more than just a drink—it was an experience, a source of energy, and a way to feel balanced.
But I wanted to take it further.
So, I started searching.
I was curious to find the best matcha, constantly comparing one to another, exploring different sources and qualities. That search led me to Shizuoka, Japan, a region known for its ideal growing conditions and skilled tea farmers.
I learned about:
